The Vegetarian Benedict: A Surprise Favorite

For the main dish, we went with the Vegetarian Benedict — and we weren’t even trying to eat vegetarian!
Two perfectly poached cage-free eggs, stacked on a flaky buttermilk biscuit, topped with silky hollandaise, and served with seasoned Sunday potatoes (yes — even though it wasn’t Sunday yet, and we loved that).

We’re all meat eaters here, and still couldn’t get enough. We’re now officially planning a return trip for the Braised Beef Benedict and the Seafood Benedict — because if the veggie version is this good, the others must be off the charts.
