The woman at the counter seemed almost awkward saying it was coming, and then there was a man standing right behind her… serious, silent, and not exactly the welcoming vibe you’d expect from a hospitality brand like Hilton. Piebird is a new restaurant and bar concept developed by DoubleTree by Hilton’s in‑house culinary team, known as StiR Creative Collective, which crafts original food and beverage experiences for Hilton properties across the country.
The concept is inspired by classic American comfort food and seasonal pies — with a modern twist on familiar favorites. Think chicken pot pie, biscuits and gravy, tomato jam grilled cheese, salads, midday fare, and a rotating lineup of handcrafted desserts featuring signature pies that change with the seasons. Breakfast items like Monkey Bread French Toast and quiche are also on the menu, along with creative drinks like a Cookie Martini nodding to the beloved DoubleTree chocolate chip cookie.
Piebird takes its name from the small ceramic vents used to let steam escape from baking pies — a nod to the warm, nostalgic heart of homemade cooking that the restaurant wants to capture.
The first Piebird location was originally expected to open last fall at DoubleTree by Hilton Hotel Nanuet in New York but has been slightly delayed, with the Asheville – Biltmore location projected for early 2026. Additional locations at other hotels are anticipated as the concept hopefully grows.
